Paleo Chocolate Barks (paleo, vegan)


These chocolate barks have been up my sleeves for quite some time now. I have invented them (they might have been around, however for me it was a huge invention) two years ago, when I have been continuously making them for an entire summer, once filled with cranberries and almonds, once with dates and without any honey. They are as good as chocolate can get for me. Smooth, quickly melting, yet thoroughly chocolate, a deep cocoa flavour envied by all the dark chocolate bars on the shop shelves. 


Paleo Chocolate Barks

¼ cup cocoa powder
¼ cup coconut oil
2 tbsp honey
½ tsp vanilla extract

1/8 cup pistachios
1/8 cup dried cranberries

Melt coconut oil and add cocoa powder and honey and mix thoroughly. Pour it into a pan filled with parchment paper and let it cool in the fridge before jumping on it.

Paleo Pizza


Paleo Pizza - something I didn't believe in, something that seemed fictional. Is it possible to make a tasty, soft pizza "dough" that is crunchy at the end with any topping I like? Yes, it is more than possible. This is my first Paleo Pizza recipe but there's more comming. 
Pizza nights at our house are now on!

Taste of the Middle-East: Ma'amoul


As I have promised earlier I am going to introduce you to some of the best the Middle-East can offer, starting with Ma'amoul cookies. These little bite-size treats usually come in different shapes and tastes according, such as date and walnut filling. I opted for a rich, (naturally) sweet and sticky fig filling, which is my Hubby's favorite. 
These cookies are eggless, gluten-free, dairy-free and added sugar-free, however made with the mixture of almond meal and rice flour to yield a more authentic experience.

Life is good here in the Middle-East, especially for those who approach it with much patience and laughter. But on those gloomy days when nothing seems to trigger my cheeks to curve in the right direction, I like to treat me with some cookies...

Middle-Eastern Adventures

I had been seen off to the airport by my parents. I was clutching the handle of my handluggage with one  hand, and squeezing the life out of my husband's hand with the other. He didn't seem to mind my hand sweating exessively. I couldn't hold my tears back. I haven't cried like this since I can remember. I was a child again, childish tears rolling on my adult face. Sobbing and waving vigorously to my parents I have left my home. I stopped crying when after 7 hours we arrived at Doha, capital of Qatar.

After our arrival our great adventure has began and I never cried another tears of sadness. I love being here. We are open to all fun things and I've decided to embrace this year or these years as the great adventure of my life, as it is. Happiness comes to me naturally here. Along with peace and much inspiration.

Paleo Hot Chocolate (paleo, vegan)

 This is a delicious, extremely creamy and sweet hot chocolate that I have perfected nearly two years ago, just after having jumped on the paleo bandwagon. This is a beverage I like to enjoy when I'm craving something sweet and chocolaty in the cold winter nights...



Paleo Hot Chocolate
1 cup, serves 2

1 ripe banana
1/2 cup coconut milk
1/4 cup hot water
1 tbsp cocoa powder (preferrably Dutch processed)
1 tsp vanilla extract

Bring the coconut milk and hot water to boil. Mash the bananas with a fork. Place all of them in a mixer with the cocoa powder and mix until smooth. 

There you have it, excellent, creamy, sweet hot chocolate. :)

Banana Pancakes: Naturally sweet, light and gluten-free! (gluten/sugar/dairy free, paleo)


These trully gluten-, dairy- and sugar-free babies received a huge rave on my Hungarian blog. They have a steady seat in my top 10 gluten-free/paleo recipe list. They are variable and oh so satisfying. 
Depending on how much flour you use these babies changes texture from almost bread like to so fluffy you can barely hold them with your hands. 
They are amazing freshly bakes and they are equally good cold (it happend only once that they had time to cool down completely, for I have tripled the amount and demanded my family to leave some for afternoon snack after our weekend nap). 
Kids and grown-ups equally love it and cannot stop at one. 
They are the perfect weekend brunch material, or a lazy morning recipe to bring to bed for your loved ones with some aromatic, freshly brewed coffee, since they are very quick to make and while cooking them they fill the house with a sweet cake smell noone can resist.

Pouring some maple syrup... for pure indulgence. 
I've always loved pancakes but was never the fan of the thick texture. Always preferred crépes.
However these pancakes have an American pancake like quality, but still much lighter in texture and their naturally sweet taste complements any fresh fruit that goes along with it or just the extra sprince of cinnamon.

Not another praise from me, try them now and heart me later. :)

Plain Almond Cookies for Nutella (gluten/sugar/dairy free,paleo)


Do you remember the famous Chocolate-Hazelnut Spread, a.k.a. Paleo Nutella?
Well, here is something that goes best with it. One of the best actually, since the Paleo Coconut Bread is also  a very good match, but for me, this little, simple, plain cookie is the perfect choice.



I wish every girl had a relationship with his father like the one I had. To be always loved, always protected, always listened to. To have mischievious habits to share, and to be remembered when little girls grow up. I have one such memory with my Dad: standing at the kitchen counter in pijamas, dipping a teaspoon in Nutella then frosting little, plain cookies with it and eating it...one after another, gossipping, talking about the big issues of life. For this memory, which I cherrish so much, I have created the Paleo Chocolate-Hazelnut Spread and these cookies to go with it.

Side note: these cookies are also very good when dipped in hot cocoa or tea.
